In the world of specialty coffee, the term “specialty” is not merely a grade of quality. It represents the culmination of traceability from production to the cup, and the dedicated effort to maximize the unique flavor profile inherent in each bean. During the roasting process, we constantly study how to control thermal energy, alter the internal cellular structure of the beans, and manage the caramelization of sugars.
